1. Prepare the Churro Dough:

    • In a medium saucepan, combine 1 cup water, 2 tablespoons butter, 1 tablespoon sugar, and ⅛ teaspoon salt.
    • Heat over medium heat until the mixture begins to boil.
    • Once boiling, reduce the heat and add 1 cup flour all at once.
    • Stir immediately and vigorously until the dough comes together and pulls away from the sides of the pan. This should take just a few minutes.
    • Remove from heat and let the dough cool for 5 minutes.
  1. Mix in the Egg:
    • Add 1 large egg and 1 teaspoon vanilla extract to the dough.
    • Mix well until fully incorporated. You can use a mixer for this step if preferred. Note that the mixture may appear to separate initially, but keep mixing until smooth. This step may take a few minutes.
    • The dough should be smooth and pull away from the pot and spatula.
  2. Pipe the Churros:
    • Prepare 2 piping bags with a star tip (I used Ateco 847). Using two layers of piping bags is helpful because the dough is thick.
    • Transfer the dough into the piping bags and pipe 5-inch strips onto a parchment-lined baking sheet. Cut the ends with scissors.
  3. Fry the Churros:
    • Heat oil in a deep fryer or large pot to 350°F (175°C). Use a candy thermometer to monitor the temperature and keep it between 330-350°F (165-175°C) while frying.
    • Fry each churro for about 5 minutes, turning them halfway through. They should be golden brown when done.
    • Remove churros from the oil and drain on paper towels.
  4. Coat with Cinnamon Sugar:
    • Mix ½ cup sugar with 1 teaspoon ground cinnamon in a bowl.
    • Roll the warm churros in the cinnamon sugar mixture to coat.
  5. Prepare the Hot Chocolate:
    • In a small saucepan, heat ½ cup heavy cream until the edges start to bubble. Do not let it boil.
    • Pour the hot cream over 3 oz chopped bittersweet chocolate.
    • Stir until the chocolate is completely melted and smooth.
