Ingredients & Equipment

  • Gelatin Powder
  • Cold Water
  • Fruit of your choice
    • Green Kiwi 🥝
    • Strawberry 🍓
    • Shine Muscat
    • Apple Mango 🥭 (cut into flower shapes)
    • Dragon Fruit (cut into 3mm thick pieces, shaped into hearts)
    • Kumquat
  • Sugar
  • Vanilla Sponge Cake Mix
  • Milk
  • Oil
  • Condensed Milk
  • Cream
  • Teflon Sheets or Kitchen Wrap
  • 23cm x 23cm Mold
  • Ruler
  • Silicone Cutting Board

Instructions

  1. Prepare Gelatin
    • Soak gelatin powder in cold water for about 20 minutes.
  2. Prepare Fruit
    • Wash and dry all fruits.
    • Cut fruits into 3mm thick pieces.
    • Refer to the description box for a video on making orange confit. 🙏
    • Note: Kumquat can be eaten including the peel. Refer to the description box for more info. 🙏
  3. Make Jelly
    • Heat water to 50°C-60°C (122°F-140°F) and dissolve the soaked gelatin with sugar.
    • Cool the mixture to 27°C (80°F).
    • Pour a small amount of jelly into the mold to lightly cover the bottom.
    • Arrange the fruit on top.
    • Harden in the refrigerator for about 10 minutes.
    • Pour in the remaining jelly at 30°C (86°F).
    • Refrigerate for 2-3 hours.
  4. Prepare Sponge Cake
    • Preheat oven to 165°C (330°F).
    • Mix milk and oil at 50°C (122°F) and set aside.
    • Make meringue by adding sugar in three parts.
    • Pour the mixture into the mold and bake for 13-15 minutes.
    • Allow the sponge cake to cool.
  5. Prepare Cream
    • Whip cream with condensed milk to enrich the flavor.
    • Apply cream evenly to 1/3 of the sponge cake.
    • Trim and place strawberries in the 1/3 area, then cover with cream.
    • Roll the cake tightly using a silicone cutting board.
  6. Assemble the Cake
    • Apply the remaining cream to the surface of the roll.
    • Place the fruit jelly on top of the cake.
    • Carefully roll the cake using Teflon sheets or kitchen wrap.
  7. Final Touches
    • Remove the wrapping carefully.
    • Slice and enjoy the beautifully rolled fruit jelly cake!
