Crispy Vegetable Spring Rolls with homemade roll wrapper

For the Roll Wrappers:

  1. Ingredients:
    • 165g all-purpose flour
    • 2g salt
    • 50g hot water
    • 50g cold water
    • Cooking oil
  2. Instructions:
    1. Mix the flour and salt together.
    2. Split the mixture in half.
    3. Add 50g of hot water to one half and mix well.
    4. Add 50g of cold water to the other half and mix well.
    5. Knead the dough with your hands for about 8 minutes until it’s soft.
    6. Divide the dough into 10 equal pieces.
    7. Grease a bowl with cooking oil.
    8. Flatten each piece of dough into a circle and place it in the oiled bowl.
    9. Brush some cooking oil on each circle of dough.
    10. Cover with cling film and let it rest for 30 minutes.
    11. After 30 minutes, gently press the dough with your palm.
    12. Dust one side of each dough circle with flour.
    13. Stack the dough circles on top of each other (the top sheet should not have flour).
    14. Stretch each dough circle evenly by hand and roll it out with a rolling pin on a lightly oiled surface until it’s about 23cm in diameter.
    15. Place the rolled dough on baking paper and steam in boiling water for 8 minutes.
    16. Once steamed, use a plate to trim the edges and carefully separate the layers.
    17. Store the roll wrappers in a ziplock bag to keep them moist.

For the Filling:

  1. Ingredients:
    • 140g lotus root, peeled and thinly sliced
    • 80g carrots, peeled
    • 1 bell pepper
    • 2 shiitake mushrooms
    • 1 onion
    • Cooking oil
    • 1 tbsp soy sauce
    • A little salt
    • 1 tsp vinegar
  2. Instructions:
    1. Slice the vegetables and keep them ready.
    2. Heat cooking oil in a pan and add all the chopped vegetables except the onion.
    3. Stir-fry the vegetables.
    4. Add 1 tbsp soy sauce and a pinch of salt.
    5. When the vegetables are nearly cooked, add 1 tsp vinegar.
    6. Stir-fry until crispy but still flavorful.

Assembling the Spring Rolls:

  1. Place some of the cooked vegetables in the center of a roll wrapper.
  2. Add raw onion and lettuce.
  3. Fold both sides of the wrapper over the filling and roll it up tightly.
  4. Heat a pan and cook the rolls on medium-low heat until both sides are crispy and golden brown.
