For the Roll Wrappers:
- Ingredients:
- 165g all-purpose flour
- 2g salt
- 50g hot water
- 50g cold water
- Cooking oil
- Instructions:
- Mix the flour and salt together.
- Split the mixture in half.
- Add 50g of hot water to one half and mix well.
- Add 50g of cold water to the other half and mix well.
- Knead the dough with your hands for about 8 minutes until it’s soft.
- Divide the dough into 10 equal pieces.
- Grease a bowl with cooking oil.
- Flatten each piece of dough into a circle and place it in the oiled bowl.
- Brush some cooking oil on each circle of dough.
- Cover with cling film and let it rest for 30 minutes.
- After 30 minutes, gently press the dough with your palm.
- Dust one side of each dough circle with flour.
- Stack the dough circles on top of each other (the top sheet should not have flour).
- Stretch each dough circle evenly by hand and roll it out with a rolling pin on a lightly oiled surface until it’s about 23cm in diameter.
- Place the rolled dough on baking paper and steam in boiling water for 8 minutes.
- Once steamed, use a plate to trim the edges and carefully separate the layers.
- Store the roll wrappers in a ziplock bag to keep them moist.
For the Filling:
- Ingredients:
- 140g lotus root, peeled and thinly sliced
- 80g carrots, peeled
- 1 bell pepper
- 2 shiitake mushrooms
- 1 onion
- Cooking oil
- 1 tbsp soy sauce
- A little salt
- 1 tsp vinegar
- Instructions:
- Slice the vegetables and keep them ready.
- Heat cooking oil in a pan and add all the chopped vegetables except the onion.
- Stir-fry the vegetables.
- Add 1 tbsp soy sauce and a pinch of salt.
- When the vegetables are nearly cooked, add 1 tsp vinegar.
- Stir-fry until crispy but still flavorful.
Assembling the Spring Rolls:
- Place some of the cooked vegetables in the center of a roll wrapper.
- Add raw onion and lettuce.
- Fold both sides of the wrapper over the filling and roll it up tightly.
- Heat a pan and cook the rolls on medium-low heat until both sides are crispy and golden brown.
