Make Basic Lemon Jelly:

    • Add sugar to lemon juice.
    • Soak and melt the gelatin.
    • Use about 1/5 of the lemon jelly mixture.
    • We’re making 5 flavors, each with about 45g to 47g.
    • Optional: Add food coloring for a pretty touch. 😊
  • Prepare the Flavors:
    • Strawberry 🍓
    • Tangerine or Orange 🍊
    • Green Kiwi 🥝 (briefly boiled and dried)
    • Apple Mango 🥭
    • Red Grapes 🍇

    Refrigerate: Chill for 2-3 hours.

    For Cookies:

    • Use an 8.5cm (diameter) cookie cutter.
    • Roll to 3mm thick.
    • Bake at 160°C (320°F) for 10 minutes.
    • Remove the mold, and if you used a mousse ring, wrap it in a hot towel to release.
  • Assemble the Cake:
    • Wrap the mold, place the jelly in the center, and refrigerate.
  • Make the Cheesecake:
    • Mix sugar, unsweetened yogurt, and lemon juice.
    • Soak and melt the gelatin.
    • Add heavy cream.
    • Refrigerate for 2-3 hours.
  • Finish the Cake:
    • After the cookies are baked and cooled, place them on top of the cheesecake layer.
    • Flip the mold over and remove it.
